Step 1: Prepare the Oven and Pan

Preheat your oven to 350°F (175°C). Line a standard loaf pan with parchment paper, leaving some overhang on the sides to make it easier to lift the bread out after baking. Lightly grease the paper if needed to prevent sticking.

Step 2: Mix the Dry Ingredients

In a medium mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Whisk thoroughly to ensure there are no lumps and that the baking powder is evenly distributed. This step is important for achieving a uniform rise and texture.

Step 3: Prepare the Wet Mixture

In a separate large bowl, crack the eggs and beat them using a whisk or hand mixer for about 1 to 2 minutes. The eggs should become slightly frothy and lighter in color, which helps incorporate air into the batter for a softer bread.

Add the melted butter, making sure it is not too hot so it does not cook the eggs. Then mix in the sweetener, vanilla extract, and warm almond milk. Stir everything together until the mixture is smooth and well combined.

Step 4: Combine Wet and Dry Ingredients

Gradually add the dry ingredient mixture into the bowl with the wet ingredients. Fold gently using a spatula or spoon, mixing until a thick, cohesive batter forms. Avoid overmixing, as this can affect the final texture.

Once combined, add the apple cider vinegar and mix lightly. The vinegar reacts with the baking powder, helping the bread rise and improving its overall softness.

Step 5: Transfer and Shape

Pour the batter into the prepared loaf pan. Because the dough is thicker than traditional bread batter, use a spatula to spread it evenly. Smooth the top to create an even surface, which will help the bread bake uniformly.

Step 6: Bake the Bread

Place the loaf pan in the preheated oven and bake for 30 to 35 minutes. The bread is ready when the top is golden brown and firm to the touch. You can insert a toothpick into the center; if it comes out clean or with just a few crumbs, the bread is fully baked.

If the top browns too quickly, you can loosely cover it with aluminum foil during the last 10 minutes of baking.

Step 7: Cool the Bread

Remove the bread from the oven and allow it to cool in the pan for about 10 to 15 minutes. Then lift it out using the parchment paper and transfer it to a wire rack to cool completely. Cooling is essential, as the bread continues to firm up and set during this time.

Step 8: Finish and Serve

Once slightly cooled, you can brush the top with melted butter for a glossy finish and extra richness. Slice the bread using a serrated knife for clean cuts.

Serve warm or toasted. This bread pairs well with butter, sugar-free jam, cream cheese, or savory fillings like eggs and cheese.

Let all refrigerated ingredients come to room temperature before mixing.

Do not skip the apple cider vinegar; it helps create a lighter texture.
