Introduction

This keto brioche bread is a soft, slightly sweet, and buttery low-carb alternative to traditional brioche. Made with almond and coconut flour, it has a tender crumb and rich flavor while remaining gluten-free and sugar-free. It works well for breakfast toast, sandwiches, or even as a base for keto French toast.

Ingredients

Dry Ingredients:

2 cups almond flour (finely ground for best texture)

¼ cup coconut flour

2 teaspoons baking powder

¼ teaspoon salt

Wet Ingredients:

4 large eggs, at room temperature

3 tablespoons unsalted butter, melted and slightly cooled

¼ cup keto-friendly granulated sweetener (such as erythritol or allulose)

¼ cup warm unsweetened almond milk

1 teaspoon vanilla extract

1 teaspoon apple cider vinegar

Optional Topping:

2 tablespoons melted butter, for brushing after baking
