200g dark chocolate (preferably high-quality)
1 cup heavy cream

1 1/2 cups heavy cream, chilled
2-3 tablespoons powdered sugar (adjust to taste)
1 teaspoon vanilla extract

Step 1: Prepare the Chocolate Ganache
Break the dark chocolate into small pieces and place them in a heatproof bowl.
In a saucepan, heat the 1 cup of heavy cream over medium heat until it just starts to simmer (do not let it boil).
Pour the hot cream over the chopped chocolate in the bowl. Let it sit undisturbed for a minute or two to allow the chocolate to soften.
Gently stir the mixture with a spatula or whisk until the chocolate is completely melted and the ganache is smooth and glossy.
Set aside the chocolate ganache to cool slightly while you prepare the creamy layer.
