1 cup semi-sweet chocolate chips
1 tablespoon coconut oil

Instructions

Mix in the graham cracker crumbs until a soft, dough-like consistency forms.
Scoop out small portions of the mixture and roll them into 1-inch balls. Place on a baking sheet lined with parchment paper.

Melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 20 seconds until smooth.
Dip each firm cheesecake ball into the melted chocolate, using a fork to coat evenly.
Place the chocolate-covered balls back onto the parchment paper and refrigerate until the chocolate sets.
